-1 tsp. sesame oil
-2 tsp. grated fresh ginger
-3 oz. boneless organic chicken, cut into strips or cubes
-1 tsp. flaxseed oil
-Optional: basil, chopped
Any combination of the following veggies:
-2 carrots, diced
-1 stalk celery, diced
-1 cup bok choy, chopped
-½ cup diced onion
-½ cup chopped broccoli and/or cauliflower
-½ cup snow peas
-¼ cup mung bean sprouts
Heat sesame oil and ginger in a wok and stir-fry your choice of vegetables for about 5 minutes. Add chicken pieces and continue to stir-fry until cooked through. Optional: Just before removing from heat, add freshly chopped basil. Add 1 tsp. flaxseed oil upon completion of cooking. Serve with wild rice or quinoa.
